Fried Banana-Banh Chuoi Chien

Ingredients:
   4 ripe but firm regular bananas, or 8 baby bananas ( In Vietnam, we use Chuoi Xu /Xiem)
   4 cups vegetable oil for deep frying (or more if use deep fryer)
   1 cup self raising flour ( or 1 cup all purpose flour + 1.5 tsp baking powder+1/4tsp salt)
   1/4 cup rice flour
   2 Tbs sugar
   1/2tsp salt
   1 cup water, divide into 3/4 and 1/4 portion.

1. Sift together the self raising flour, rice flour and sugar into a bowl.  Add 3/4cup water slowly just enough to make a smooth, thick batter( thick enough to coat a spoon).  If too thick, add more water.  Mix well, let stand for 20 minutes.
2. Heat oil in a a large, heavy pan  or deep fryer to 375oF /190oC  over medium hight.  Line a plate with paper towel.  Meanwhile, peel bananas, cut in half crossways, then in half again lengthways. Dip each one into the batter until well coated, then carefully slip it into hot oil.  Fry 4-5 pieces at a time.  If oil is getting too hot, turn the heat down to moderate medium. Make sure use chopsticks or tongs for turning, deep fry until crisp and golden all over about 3-4 minutes.  Drain on kitchen paper.  Repeat with the rest of bananas.  Serve hot.

Note:
    We can add 1Tbs white sesame seeds and 1/2 cup of shredded coconut  to the batter
    May use 1 cup  rice flour with 1tsp baking powder
   May use the batter for yam or sweet potato, sliced thin or 1/4 inch thick.
