Low Country Boil

For years we have gone to the gulf coast for the 4th of July. We rented condo's for the week and had a big time. This year we are staying closer to home, and the rest of the family is spread around the world. I am having a hard time~ wishing we were flying kites on the beach!

One of the favorite things to do while at the beach is have a Low Country Boil. This is more a process than a recipe. It is so simple to do and can feed 4 or 14~ just add more goodies! Here's the scoop~

Low Country Boil2# large shrimp4 ears corn, shucked4-8 small potatoes1# sausage1 package shrimp boil
In the largest pot you have boil 2-3 cups water, add shrimp boil in the package. In the bottom of the pot place sausage cut into ~2inch pieces. Add whole potatoes. Bring to a simmer and cook until potatoes are tender. Break each ear of corn in half, layer in pot on top of the potatoes. Cook 10 minutes until corn is tender. Top with shrimp, cover and cook 5 minutes until shrimp is pink and curled. When ready to serve, scoop out some of everything onto each plate or pour out onto a table covered with newspapers. Serve with french bread and plenty of cocktail sauce.
